Top Sirloin, Flanken-Ribs, Flank Steak, $13 lb

Top Sirloin steaks are great for grilling. Grill your Flanken-Ribs slowly for full beef flavor and fall-off-the-bone tenderness. Flank steaks are lean and boneless with lots of intense beef flavor. Best when marinated and grilled or sliced thin and stir-fried.


Beef Brisket, $12 lb

Brisket is a barbecue favorite because slow-cooking brisket melts the connective tissue, turning this cut of meat into a tender, melt-in-your-mouth feast. This full-flavored meat can be sliced or shredded.


Sirloin and Round Steak, $11 lb

Boneless and lean, this cut is inexpensive and ideal with a tenderizing marinade before grilling.

Cube, Skirt, and Rack of Ribs, $10 lb

Cube Steaks are versatile! These cuts are ideal ingredients for dishes such as burgers, tacos and meat sauce. Perfect for breakfast, dinner and everything in-between.

Skirt Steak—a thin, flavorful cut that’s best when marinated and seared over high heat.

Braised or grilled low and slow, lamb shanks are fall-off-the-bone tender.

Tri-Tip Roast, $10 lb

The Sirloin is home to popular fabricated cuts but is first separated into the top and bottom sirloin. The bottom sirloin provides the Tri-Tip and is great for roasting or grilling.

Ground Lamb, $10 lb

A unique flavor that’s great with some Greek seasonings. Ground lamb makes delicious gyros and an excellent base to a hearty, wholesome soup.

Chuck Roast, Chuck-Eye Steak, Flat Irons, Beef Hanger Steak, $9 lb

Chuck roast is a good value with loads of beef flavor. Roast to highlight natural tenderness and flavor.

Flat Irons are extremely tender, well-marbled and flavorful and great for grilling.

Marrow Bones, $3 lb

Beef marrow bones are packed with unique health benefits.  Use marrow bones to make your own beef broth. Excellent source of collagen, a 2019 study showed that long-simmered homemade bone broths—especially using the most collagen-rich tissues like beef marrow bones, can deliver up to 20 grams of collagen protein in one cup of broth.
